RECIPES OF THE FUTURIST CUISINE
(synthetic interpretation of the vegetable gardens, gardens and pastures of Italy by the futurist painter Fillia)
- 11 different qualities of previously cooked vegetables (for example: spinach, chard, artichokes, turnips, cabbage, peas, carrots, parsley, spring onions, celery, green beans);
- minced veal;
- fresh sausage;
- chicken meat;
Roast the minced veal and the sausage separately. Cook the 11 vegetables to your taste. Cut three small circles of chicken meat and roast them.
Add the 11 previously cooked and chopped vegetables to the minced veal and season with salt. Press the veal and vegetables to form a cylindrical meatball which will be placed vertically in the center of a serving dish. Arrange the sausage at the base of the cylinder and garnish with the three circles of chicken meat. Crown the composition with a thickness of honey.
Very virile dish in form and composition.
In the spirit of futurist cuisine we have made a variation to the recipe by incorporating a raw egg into the minced veal because otherwise they could not create the cylindrical meatball!
